Several recent books from Hentzenwerkes cover this;
Effective Techniques for Application Development with Visual FoxPro 6.0 by Jim Booth and Steve Sawyer discusses this in some detail (it's a really well written book, BTW, not just for n-tier in VFP) and contains some useful sample code to show how and where n-tier design is effective.
