John,
I'm currently working on a similar project for one of my clients over the internet. MOST VAN's offer an internet solution now (including Harbinger with Harbinger Express & TrustedLink Templar & others). For my project, I'm working with some big Food Industry companies on a direct-connect XML implementation. If you want a few (hundred) EDI links, email me and I'll send you them.
As far as hardware goes, the requirements for prepackaged solutions (like Harbingers, etc.) depend on what you buy. In a general sense, get as much reliability and stability as possible. Remember, a business using EDI RELY's on that equipment for survival.
