The deepest that I protect on a screen is at the Tab level. I often use the SSTab control on forms and when I define screen (in my access right table) I have a column telling the screen and another telling the tab. When I load the form, I disable tabs for which user don't have access.

Also before loading a form, I check if user have access.

I never had to protect only one particular field. I have always been to put them all in a separate tab.
