That chapter was written by Seve Sawyer and he uses views exclusively for all data activity. As for what benefits there might be for using a view, well you can limit the number of employees in the view using a parameterized view. That can surely speed up the list or combo.

If you read the chapter on Views, Steve gives a very good explanation as to why he prefers to use views exclusively.
