It's due to the fact that only tables contained in a database (DBC) can have the longer names. A new table created by COPY STRUCTURE is not in a database (yet) so the fields get truncated to 8 characters.
Either shorten the names in your original table, or programatically add the table to a database and change the field names before you do anything with it.
