I generally give them a copy of source code but have lately been re-thinking this idea. One reason: if they have an executable they won't try and resell the app. I never give the copyright unless I have to.

A lot of times though, I will leave source code on site so I can make changes there. I also make all my customers buy a copy of VFP so that I can have the full environment when trying to debug. Also helps VFP's sales.
