I know what you mean. I drove through Vegas to and from DevCon. Only spent a day on the way down, but was there for a few days on the way back. If you're into roller coasters, the one at New York, New York is good. Also drive 30 miles toward calif to Primm and go on the coaster at Buffalo Bill's. The coaster at the Stratosphere is very, very mild. It's just that you're up 112 stories.
