IMHO, Given the app will be used by a wide variety of users, you're better off sticking with 640x480. I recently ran into a new machine with a 17 inch monitor and I asked the user why they ran in 640x480 mode. It turns out an older app they rely on forces the screen resolution to 640x480, they didn't have a choice. Also remember there are a lot of older monitors out there incapable of running higher resolutions.
