As Mark and Roi hint, a combo-combo (blech!) will not display a value that's not in the list. You have to add it to the list if it's not there.

The way I think of them is: the combo-combo lets the user enter a new value that's not in the list, but it needs to get put in the list in order for the choice to persist. Otherwise, it evaporates.
