Thanks for your suggestions. I did switch to the Epson drivers, but still could not get the software to override the hardware settings (or for that matter even get the hardware settings to work correctly.) I was working on an NT WordStation with NT drivers, then I changed to a Windows 98 machine and everything worked correctly.
