WROX Press, Windows Script Host Programmer's Reference, by Dino Esposito. ISBN 1-861002-65-3. It's VB/ASP oriented, but it's easy to make the code transition, and there's lots of good stuff in it. And WROX Press has lots of downloads connected with the code in the book, too. In stock at Amazon the last I checked.

There was also a great series of articles on the WSH in Windows NT Systems magazine earlier this year. i believe the full text from the Inside the Box columns that cover it is available on-line at www.ntsystems.com, and if not, you can order back-issues from them. If you do NT, I'd just get a subscription - they're pretty liberal about subscriptions for corporate NT types as I recall.

And the July MSDN docs are pretty good, too. The WSH Reference topic in the index brings you to a wealth of information.

WSH version 2 (now built into Win2K) greatly expands the automation object; Esposito's book covers it, and the docs for the WSH 2.0 beta are pretty good (the tutorial is very weak, though.)
