I am not contesting or disputing, (I have never written a large C/S app, so I am in no position to contest or dispute :-)) but would you explain what C/S has to do with how much "munging" an application needs to do?

I mean, isn't the amount of data munging more related to the nature of the application's function than it is to the storage format of that data? I am confused.
