I actually suggested that earlier this year. While in most cases such a feature would be used as you would expect, it has the potential to be abused. I could make a personal attack on you, then edit it later and call you paranoid.
I suppose that Michel & Co. could log each "version" of each message, but that might require a significant redesign to the data underlying the UT, and it wouldn't benefit the average user, who would still see only the most recent version.
