You would end up having to run some sort of bot on the server that wrote a file with a list of the people in the place, and then count the lines in that file.
(at a guess.)
Or, you could write to a file each time someone went into the chat, but then you would be in trouble trying to figure out when they left, and it wouldn't reflect the people going into it from a non-ut mechanism.
It might be too much effort for what it would do for us.
