Can I protect my code in the classes so I can give them.

You should feel free to hide your code or not... unless there are political or legal reason for you to do one or the other.
I have had code stolen by a company president, who brought in another developer to use my code to undercut me, even though we had a written agreement that was supposed to prevent that. In this country, I could have resorted to legal means to recover my intellectual property. However, I made the decision to not expend the financial and personal capital to recover. As it turned out, the company president got fired by the shareholders for his overall imcompetence and the developer made a botch of the job.
I still wish that I had protected my code. It would have saved me a lot of angst and, as it turned out, it would have saved the client about $30,000, and about 8 months of wasted time, in a dead end project.

I do know that there are countries where we, if our code were stolen, particularly since we would be foreigners selling into that country's market, would have had no legal means of recovery ... to say nothing of any practical means of recovery.

The predisposition to theft if not unique to any particular culture. However, the concept of property rights and the social/legal structures to remedy transgressions is much more strongly imbued in certain cultures/societies than others.
