That doesn't suprise me. I believe there is a bug in VFP 5.0. Whenever we use the system generated printer menu options in our programs, they are ignored by the system, and it uses the system defaults. We haven't been able to fix the problem (even with SP3). So we usually take it out of the menu. I know this probably doesn't help your current situation very much, but hope it is usefull somehow.
As far as I know, there is no way to programmatically set printer properties. I know you can check them with different functions, but I don't know of any way to manipulate them. Sorry.
