If you just want a plain ol' list, over at Microsoft, they've made available the Microsoft Office 2000 Langauge Reference, which includes volumes for Word. It's at:

Quite honestly, I'd recommend the Granor/Martin book that Dave mentioned. It explains the object model, and walks through the most commonly used properties and methods, and has lots of example code. See
