If you just want a plain ol' list, over at Microsoft, they've made available the Microsoft Office 2000 Langauge Reference, which includes volumes for Word. It's at:
http://msdn.microsoft.com/library/default.asp

This is an alphabetical list of valid properties, methods, and events, and makes no attempt to put them in context. It's great if you know what you're looking for.

Quite honestly, I'd recommend the Granor/Martin book that Dave mentioned. It explains the object model, and walks through the most commonly used properties and methods, and has lots of example code. See www.hentzenwerke.com. (Thanks for the recommendation, Dave, so I could shamelessly plug my book! <vbg>) Chapter 6 covers the mail merge issue.
