Unfortunately, it seems that the resizing is limited to the current screen size, so its not possible to get the window to be too big. It doesn't appear possible to fill the entire screen if the top left corner is off-screen.

Another thought was to ensure the app is maximised & create an "Always Topmost" app. thats not resizeable/moveable/closable to sit above the menu. I'll give that a try when I've got a few monents.
