As for Orlando, there are as you would expect literally dozens and dozens of motels surrounding the Disney area. That covers a lot of square miles, though, so distance from the conference hotel would be a consideration. On the other hand, if you're willing to room with someone at the conference hotel you could start a 'roommates wanted' section on the UT Conferences document.
