Having those commands (SEEK,ZAP,PACK) have nothing to do with where your tables reside. You will still use them.
As far as the general field I think you just use the TEXT field in SQL.
Start applying your tables to SQL server (even as a test) just look in the data type of the SQL help and it will tell you what to use.
