VSI uses CSIDLs to provide reference locations for installing a WinApp, as (according to MS) we all should be doing at this point in time to provide for maximum flexibility in the install process. You could alter the default locations for the CSIDLs used for reference purposes by the OS; I suggest that you read the entry on CSIDLs in the MSDN Library for a complete explanation of what CSIDL referencing is intended to do AFA the install process, and managing the security of the designated locations.
If you want to not use CSIDL reference based locations, then VSI is the wrong tool to use; I'd suggest investing in a third-party product like InstallShield Express or the baseline Wise product. IAC, the exact name of the folder should be pretty immaterial, as long as you can find it; I'd rather find my app stuff in a common Applications directory, to ease the issue of handling finding things on stations which are supporting multiple usernames and multiple Desktop environments.
