This is a shot in the dark, but I think that both IBM and Siemens-Nixdorf have (had) systems to do hotel management. If you go looking at their sites, you might find some clues in any marketing materials they have.

I used to do this sort of work on cruise ships several years back. If you have any specific design issues, please post them and I'll keep an eye out for them.
