Sure, your machine should do fine for sometihng like file-serving...

One distro that has not been mentioned is Caldera's OpenLinux. The advantage with that is the ease of installation. Since after installtion you will just be setting up some SAMBA shares so that your other machines can see the Linux box, installation will probably be your biggest hurdle. Check out OpenLinux eServer at: http://www.calderasystems.com/eserver/ and eDesktop at http://www.calderasystems.com/eserver/ That should be a good start.
