Just put the 7.0 cd in your tray and choose UPGRADE.

But be prepared to be confused. There are some major differences between 6.2 and 7.0 (like the location of the Sys V init scripts).
And also make sure that you install the upgrades as soon as you can. There is a bug in the Red Hat Updater Network thingie that will crash your system if left up for more than 10 days.
