Hi!
You can do this using SRVANY tool from Windows Option Pack (Windows NT Resource Kit). Read threads here about this tool, there are many of them, include some my explanations and pitfall warnings.
You cannot hide process in Task Manager at all, however, you can make it secured anough that no any other user will kill it from Task Manager.
