Beer goes all the way back to ancient Sumeria at least - a recipe for beer was deciphered from an ancient Sumerian text, and one of the US microbreweries (I think it was Boston Beer Co., the Sam Adams people) cooked up a batch just for fun. In ancient Sumeria, the fermentation would probably have been caused by wild yeasts, or yeasts more similar to the types that live on the skin of grapes, which are closer to what we know today as Ale yeasts. Pilsner was the first of the modern styles of beer which was light in colour, and it is made using Lager yeast, which is a type which ferments at lower temperatures and produces less esters than Ale or other types of yeasts. Pilsner came from Plzen in the Czech republic in the mid 1600's, but it is just on style of beer.
