Well, it turns out that Adaptec's EZ CD Creator (which we already own) has a program that will back up the whole hard drive to disk. I backed it up on Thursday before I left, but haven't had a chance today to test it out, yet. It looks like this will do what we want, though.

Both products make an exact record of all changes made during the install process, including archiving old versions of DLLs, registry values et al. Rather than using the Windows Add/Remove Program applet, use the uninstaller app to remove the apps that it managed during the install. Much better than the default WinApp.
