Analysis Services 2000 has it's own setup program. I have no idea about what would be involved in creating a custom distribution or even if you could do it given the license agreement. After all, it is a server product from Microsoft. It still falls under the SQL Service licensing.

For completeness...if you want to install only the client-side components (the PivotTable Service), I see no reason why you shouldn't be able to launch one of the setups that I mentioned previously from your distribution program.
