Some distros, like SuSE, have install scripts that install menu items at the same time the software is installed. Conversly, when the software is removed the menu items are removed.

But, when you don't use the distro install script (in SuSE it is called YaST, which is an acronym for "Yet another System Tool') and use RPM or 'tar' then it is up to you to add the menu items AND to set the environmental variables. You can list all of your environmental variables by issuing "env | less" from a command line. If you know the name of a particular variable you can issue "echo $" from the command line.
I've only used Mandrake for a short time so I don't remember much about it but I think it has an installation program too, one that does all the necessary stuff automatically. I can't remember what its name is. Check your documentation. Good distros come with PRINTED documentation (SuSE has three books, the main one being 700+ pages).

As far as the database applications you can go to http://www.linuxapps.com and search for 'database frontends'. You should get several dozen listed.
