You can usually set it yourself in Internet Options/General "Days to save history." But, if your IT people have something like Norton Cleansweep running silently at bootup, there may not be much you can do except complain to them about it.

However, if you have access control over your History folder (like Admin, Power User, etc), you can try setting the History folder Readonly for other users (and remove groups like System), that's another idea, if it won't get you into trouble with the IT people.
