It depends on the laptop. I've had NT WS and Svr installed on ThinkPads and Dells. IBM says they only support WS on their ThinkPads but I didn't have any problems with server.
Most laptop vendors support at least WS. However, you may have some problems simply closing the cover. Sometimes NT isn't hibernation friendly. If you avoid this, you should be okay.
