You can but I don't know of a way to do it using the Menu Designer if using the menu generator that comes with VFP. You can download GenMenuX (http://www.meistermacneill.com/download.htm) and this has a color directive that will allow this from the designer.

You could also do it in code. The COLOR clause of the DEFINE MENU, DEFINE PAD and DEFINE BAR commands allows for this.

Caveat:
As Craig posted, menu colors are controlled by the end user. As such, any color scheme you select may be unreadable to that user: either because it conflicts with what they have selected or they just just can't see it. Take this into account when changing user configurable options. They have set them that way for a reason.
