There isn't any book that covers ADO and VFP in depth. The Client Server book from Hentzenwerke has one small chapter devoted to ADO, but I found myself wanting more. There is also John Peterson's whitepaper at http://msdn.microsoft.com/library/default.asp?URL=/library/techart/ADOJump.htm.

You'll also find a few MS knowledgebase articles that will help you.
