Rush Hour was probably the most entertaining, but all of them are good. I can't remember the names I've seen so many, but I'd recommend the one where he jumps in the middle of the step ladder and fights. It's a good example of his work. Maybe someone here can recall the name.
In one movie he broke his foot doing the fight stunts. Wore a cast from the knee down throughout the rest of the movie. It shows it plainly in the ending credit outtakes, but it's hard to see in the movie.
If you don't like Jackie Chan, will you still respect me in the morning?
