If you're looking for a more general mathematical overview -- to understand some of the theory behind the approach, books on finite mathematics appear to be a good place to start.

Here are a couple books lead authored by John Kemeny -- who developed the Basic programming language many years ago.

Introduction to Finite Mathematics by Kemeny, Snell and Thompson, Prentice Hall Publishing.

Finite Mathematical Structures by Kemeny, Mirkil, Snell and Thompson, Prentice Hall Publishing.

These are approachable, undergraduate level math books which have sections devoted both to linear programming and the Simplex method. It appears that you could solve your problem with simultaneous linear equations using Simplex.
