Not sure exactly what you mean by "publishing software".

If it's a consumer item or for web use -- try www.zdnet.com -- they have a lot of good coverage of available products, but of course, a couple paragraphs can cover only the tip of the iceberg in features.

If your talking the publishing industry, various groups use different tools. Many still use Word. For some gov work and other sophisticated layout, you might try a search on SGML.
