SQL Server will release the memory when another application on the server requests more from the OS. SQL Server 7 and 2000 will manage memory dynamically if you've left the default configuration.

If you want to limit the amount of memory that SQL Server will grab, use the Memory (I think this is the name) page of the server properties dialog and set a max. value.
