I would consider dedicating a single *unnetworked* computer for a web server to start with. Back up the entire (system) hard drive to tape (DVD or CD, if that's enough) so that you can simply restore the entire system if it's ever compromised. Any "data" could be backed up/restored independently. A "system compare" could even reveal the problem areas if you are ever hacked.
