Okay, so now I get it! :)
If anyone ever gets in that situation (guess it doesn't happen since there doesn't seem to be any mention of it in the FAQ):
Once you called initdb (as the postgres user), call createuser. Once the database has been created, only postgres (or the user you called initdb with) can get in.
I had read that initdb has to be called as postgres since it has to own the files, but I got back to root to do the rest. Silly me.
