I don't have any ideas for you but I just started playing around with the speech stuff presented in FoxPro Advisor as well. Pretty cool stuff! I actually snuck back into work the other night and spent over an hour reading through all the SAPI voice recognition training scripts (a few more than once) in an attempt to improve the quality of my workstation's voice recognition performance. I think I'm averaging about 90%+ recognition with most of the problems occuring with short words. In my brief(!) experience, the rule of thumb (with my voice anyway) is that the bigger the word, the more accurate the recognition.

Like you, I didn't have any specific project to apply this too, I was just enjoying the technology.
