Alessio,
In its simple form IUSR_yourcomputername account is created by IIS installation (also IWAM_computername - launch process account). IUSR_ account is the one that correspond to anonymous inet user (inet guest account). What ever anonymous user should access and had rights to do is identified by that account. ie: If IUSR_ doesn't have right to write your data files, anonymous HTTP user can't write.
You can see that from ISS control panel and also from windows explorer by righclicking and checking security tab in your web folders.
