Pervasive (http://www.pervasive.com/) is the company that sells Btrieve (now called Pervasive SQL). The have a tool called DDF Builder that allows you to reverse engineer Btrieve tables and build the DDFs yourself. You'll find some information on their site if you're searching for DDF Sniffer or DDF Builder. I have never used it though.

Before you investigate in one of these tools, I suggest you send me a table and I will try to convert it with the tools I have available.
