I guess what you are looking to do is to extract the text from the image, what you will need is an OCR (optical character recognition) package. This is often supplied with the scanner itself, I guess yours didn't have one. This site lists several shareware OCR packages of various prices, I've no experience of any of them.

In my experience, even with the most accurate OCR s/w, careful proof-reading is absolutely necessary.
