I didn't know it at the time, in fact I was told it was turtle, but there is a Cajun dish featuring Spam that is out of this world. Perhaps because it's so hot that you can't really taste anything else. I had it after I wandered "off-road" outside of Baton Rouge one summer........(lots of other stories there)
