You can put a SET COLOR command before the TEXT command, and restore it after the ENDTEXT.

If you have Fox 2.6 DOS or Windows, look in the help file for "SET COLOR Commands."

I think a lot of that documentation was removed from VFP help, because that's not the way you do things now... one of those very helpful "included for backward compatibility, use a form instead" kind of things.
