Your best bet is not to do it; while there was a version of VFP 3 for the Mac, unless you've remained in the 3.0 arena, it's a daunting task to port the app backwards. IMO, your best bet would be to either provide access to the app under Windows via a thin client product (run it under Windows Terminal Server or Citrix, with a front-end on the Mac. If a single Mac is involved, using something like PC Anywhere to host the app for the Mac user figures to cost less, even including the host hardware and PC Anywhere, than porting or installing a system like Win2K TS.) or provide a Web interface, and leave the mid-tier and data access layers to run on the server using DCOM/COM+, with the UI producing HTML that runs/displays on the client under a Web Browser (remember to avoid using ActiveX controls for client-side execution, as most ActiveX controls won't operate on a Mac, or using many non-IE Web Browsers, even on a Windows box.)
