I would definitely combine some of the following ideas, which I will list together, again, for convenient reference:
Save the document as template. Use automation to open a document based on this template.
Mark special entries, that are to be replaced by variable data, with special symbols, for instance, *Date*. (You have to press "Undo" if Word interprets this as "Bold").
Use a table for your variable data. The table also helps to allign columns. Border lines are optional - you can get rid of those. If you have 5 pieces of variable data, insert 4 new rows through automation. The table also allows a cell to have more than 1 row - which may, or may not, be relevant in your case.
I don't think the Word MailMerge feature will give you any additional benefit in this case.
