I lived there for 10 years (1984-1993). FWIW, here are my thoughts. Bear in mind things might have changed < G >

If you do traditional Orlando tourist stuff, be prepared for sticker shock

Universal Studios should not be visited if you get motion sickness or have a bad back.

All the Disney theme parks are well done. The Magic Kingdom works for adults. Epcot was fascinating. MGM was extremely well done. I wasn't that thrilled with the Animal World - but I know several people who enjoyed it immensely.

Sea World is vastly underrated.

The Cape/Space Center is a must. I'll echo Jim's comments about a launch. A night launch is orders of magnitude better. I saw the first night shuttle launch from Orlando and it was spectacular. I can't begin to imagine what it was like at the cape.

Wet and Wild is pretty good if you go for that kind of thing.

I'm sure there's lots of new stuff I've not seen. In general, I think Orlando is a great tourist town and you won't get bored.
