It's easy to prove which is better. Write a loop to perform the single replace twice and run it 100000 times. Take a reading on SECONDS() before and after and subtract the time. Now change the code to replace both fields with one statement and time that one. Compare the times. If there isn't enough difference, make it loop 200000 times or whatever.
