You will need the Internet domain name when you configure the Simple Mail Tranport Protocol (SMTP) gateway. This runs as a service within the Domino server and receives/sends messages to/from the Internet. You add your domain here and this acts as a first-level filter. If a mail message is received that doesn't have your domain as part of the recipient, the gateway rejects the message.
You can choose any Domino domain you want. Having unique names is only important if you plan on connecting to another Domino server.
After you install the server, the first time you launch the Notes client on the server, a Configuration Wizard should run. This will walk you through all the configuration screens so you can get your Domino server up and running. I don't remember if the SMTP gateway is available during initial setup. I know it is an option during the install and if you chose it, the information may come up in the wizard.
